Substitutes
The most common "they don't have it" moments, and what to use instead. Every ingredient page also carries its own substitute.
Self-raising flour
Rare here. For 1 cup: 1 cup all-purpose flour (แป้งสาลีอเนกประสงค์) plus 1.5 teaspoons baking powder (ผงฟู) plus a pinch of salt.
Buttermilk
1 cup milk plus 1 tablespoon lime juice or vinegar. Wait 5 minutes. Tastes right in pancakes and baking.
Sour cream
Plain yogurt plus a squeeze of lime. Works for chili, tacos, and baked potatoes.
Cheddar cheese
No real substitute. Buy Anchor or Mainland blocks at Villa Market or Makro when you see them and freeze what you do not use. Processed slices melt but do not taste like cheddar.
Brown sugar
White sugar plus a spoonful of honey. Or palm sugar (น้ำตาลปี๊บ), dissolved in warm liquid first.
Molasses
Hard to find. Use brown sugar plus honey in baking. For color, a little dark soy sauce in savory dishes.
Cream cheese
No local equivalent. If a recipe depends on it, change the recipe. Mascarpone appears occasionally at Villa Market.
Cottage cheese
Rare. Crumbled firm tofu plus salt and lemon approximates the texture in cooked dishes, not in cold ones.
Breadcrumbs
Blitz dry toast in a blender. Panko-style (เกล็ดขนมปัง) is actually sold here and works great.
Tomato paste
Simmer canned tomatoes until thick. In a hurry, use double the ketchup and cook it down.
Lemon
Lime (มะนาว) in almost all cooking. Buy real lemons (เลมอน) at Villa Market when zest matters.
Celery
Chinese celery (ขึ้นฉ่าย) is stronger. Use half the amount the recipe calls for.
Heavy cream
Whipping cream (วิปปิ้งครีม) is the same thing here. Buy the highest fat percentage you see.
Corn syrup
Honey, or simple syrup (equal parts sugar and water, boiled). For pecan pie, golden syrup if you spot it.
Baking soda vs baking powder
They are not interchangeable straight. Soda (เบกกิ้งโซดา) needs an acid in the recipe. Powder (ผงฟู) works alone. When in doubt, use powder.
Fresh herbs (thyme, dill, tarragon)
Usually only at Villa Market or Foodland, and pricey. Dried jars keep forever in the humidity if sealed tight. Grow basil and mint on a balcony, they thrive here.
